Easter Bakes!

Hello, so although this week's post comes to you a little late- hopefully it'll be worth the wait! Here are 2 recipes which you can try over Easter and they are definitely yummy!

Chocolate Nest Cupcakes 
 For these lovelies you will need:
Before anything else, you will need to pre-heat your oven to 160°C.
 Start off by creaming the butter and sugar together using the back of a wooden spoon. 
In a separate bowl, beat the egg using a fork.
Gradually add the egg to the butter mixture a little at a time, stirring in between each addition.
Once all the egg is incorporated, sift the self raising flour, cocoa powder and baking powder in to the bowl and stir well or whisk with an electric whisk for extra fluffy cakes. 
Spoon the mixture into cupcakes cases and all that is left is to bake them in the preheated oven for 15-20 minutes. Once they are cooked leave them until they are completely cool and then we can start icing! 
For the icing, I do not have exact numbers for the ingredients, but basically I mixed together some butter, icing sugar and cocoa powder and a tiny bit of water. You will need a lot of icing sugar as you don't want your icing to taste buttery and don't add too much water otherwise you won't be able to pipe your icing onto your cakes as the icing will be too runny! I then iced my cakes and sprinkled some flake on top for the nest and put a mini egg in the centre to finish is off! 


  
And tadaaahh!! Lovely cupcakes with an Easter twist!

White Chocolate Rocky Road
 Next up is a bit more of a different one and a recipe which I tried for the first time. It was really simple and looks and tastes lovely!

So this is a fairly simple recipe. Firstly, line a tin with clingfilm which helps when turning it out later on. After that, all you need to do is melt the white chocolate in a heat-proof bowl over a simmering pan of water. Once this has completely melted and cooled for about 10 minutes, add all the other ingredients but leave some for decoration on top. Give it a good stir and pour into the tin and even it out. Leave to chill in the fridge for 30 minutes, then turn out the rocky road (remove the clingfilm) and cut into squares (however big you want them) and put back in the fridge to cool further.

And tadaaahh, once again, you have some lovely indulgent rocky road to eat!
