My Cookie Recipe

Here's a recipe for you to try this week to make some yummy cookies! This recipe makes 24 cookies all together. I decided to make different variations- milk chocolate, white chocolate and Smarties!

These cookies are delicious and are very easy to make. I have made these numerous times and every time they have vanished within a couple of days.

To make these cookies you will need:
75g (3oz) softened butter
75g (3oz) caster sugar
75g (3oz) soft light brown sugar
1 medium egg
1/2 teaspoon of vanilla extract
175g (6oz) plain flour
1/2 teaspoon baking powder
35g milk chocolate chunks/drops
35g white chocolate chunks/drops
35g Smarties

Method:

1. Heat the oven to 180°C,  350°F or gas mark 4. Use a paper towel to wipe a little oil over 2 baking trays. This will prevent them sticking. Put the butter and both types of sugar into a bowl.

2. Mix the butter and sugar together using a wooden spoon until the mixture is smooth and creamy. Break the egg into a small bowl and beat it well with a fork.

3. Add the vanilla extract to the egg and mix it in. Then, add the eggy mixture to the large bowl, a little at a time, stirring it well between each addition.

4. Sift the flour and baking powder through a sieve into the bowl. Stir the mixture until it is smooth.

5. Divide the mixture into 3 if you choose to make all 3 flavours. Add the majority of the chocolate chunks/drops to one bowl, leaving some for the topping later on. Stir until the mixture is combined. Repeat this with the other flavours, remembering to leave some for the topping.

6. Next, put a heaped teaspoon of one of the mixtures onto one of the baking trays. Repeat this process. I found that each mixture made around 8 cookies each. I also put 12 cookies on each baking tray. Sprinkle the cookies with the remaining toppings. 

7. Bake the cookies in the oven for 10 minutes or until golden brown. Leave them on the rays for a few minutes to harden and cool a bit. Use a spatula to lift them onto a wire rack to cool further.

Tadaaah! You now have yummy cookies ready to eat warm or to eat within a few days!
